Prospect Park apartments add high-end coffee and cocktails

“Hodges Bend and Topeca Coffee, two upscale concepts out of Tulsa, Oklahoma, will move into a new apartment project in the growing Prospect Park neighborhood along University Avenue.
Mpls.St. Paul Magazine talks with Chip Gaberino, the owner of both businesses, about what he’s got planned. Topeca Coffee, a third-wave coffee roaster (like Dogwood or Spyhouse, basically, but here’s a more detailed explanation), plans to open this winter at 2700 University Ave. (Technically just across the St. Paul border from the actual Minneapolis Prospect Park neighborhood, but still part of the broader, fast-growing area.) It’ll go alongside Hodges Ben, a cocktail bar and restaurant featuring plenty of fancy drinks (the Tulsa location has hundreds of different spirits, apparently) and a menu that will include breakfast tacos, burgers and seasonal poutines.” Read More.
